Green Kale is a wild cabbage that was combined together with long-curled leafy vegetables before a new subspecies was established. It has a fresh, plain flavor similar to other members in the brassica family, and owing to its plentiful nutritional content it is recognized as a superfood in many parts of the world.

Nutritional information: Kale can contain significant amounts of minerals, folates, carotenoids, and prebiotic carbohydrates. It is a primary source of phytochemicals such as glucosinolates, which can prompt cancer-preventive activity. Kale microgreens are abundant in A, B, C, E, and K vitamins, along with calcium, iron, magnesium, phosphorus, potassium, zinc, carotene, amino acids, and protein.
