Mung bean is an annual plant with rich flavor similar to, yet stronger to its mature variants in the Leguminosae (Fabaceae) family. Mung bean is an essential legume consumed worldwide, especially in Asian countries. It has been discovered to be an outstanding source of protein, dietary fiber, minerals, vitamins, and vast quantities of bioactive compounds, including polyphenols, polysaccharides, and peptides, thereby being a typical functional food in encouraging optimal health.
