
RED AMARANTH

Origin: South America
Red Amaranth is an annual herb that comes from the family of Amaranthaceae. This plant is known for its mild, sweet flavour and is thought to have represented 80 percent of the Aztec's diet. These kind of small plants are very rich in protein and fiber, and so the Aztecs have been able to survive on them and practically nothing else.
Its genus name comes from the Greek word (amárantos) meaning unfading in reference to the long-lasting flowers of some species.
